Mediterranean Chicken and Olive Bowl

This bowl brings classic Mediterranean flavors together in a clean, balanced dinner that’s easy to assemble. Juicy grilled chicken, briny olives, fresh vegetables and a base of rice or grains make this a simple, satisfying meal you can enjoy any day of the week.

Ingredients (1 serving)

  • 150–180 g grilled chicken breast, sliced
  • ½ cup cooked rice, couscous or quinoa
  • ¼ cup black or green olives
  • ½ cup cucumbers, diced
  • ½ cup cherry tomatoes, halved
  • 1 tbsp olive oil
  • Lemon wedge
  • Salt, pepper, oregano

Instructions

  1. Slice the cooked chicken breast and set aside.
  2. Place rice or quinoa in your bowl.
  3. Add cucumbers, tomatoes and olives.
  4. Arrange chicken on top and drizzle with olive oil.
  5. Season lightly with oregano, salt and pepper.
  6. Add lemon before serving.
