Ingredients

For the cod

  • 1 cod fillet (120–150g)
  • 1 tbsp butter
  • 1 tbsp chopped parsley
  • ½ garlic clove, minced
  • Pinch of salt & pepper
  • Lemon wedge

For the bowl

  • ½ cup cooked rice
  • ½ cup roasted baby potatoes
  • ½ cup steamed green beans
  • 1–2 tbsp walnuts (optional)
  • Extra parsley for garnish

Instructions

  1. Prepare the herb butter.
    Mix softened butter with parsley, garlic, salt and pepper. Set aside.
  2. Cook the cod.
    Heat a non-stick pan with a little olive oil. Sear cod 2–3 min per side until flaky.
    Spoon herb butter over the top while warm so it melts into the fish.
  3. Prepare sides.
    Roast potatoes at 200°C for 20–25 minutes, steam green beans until tender-crisp, and warm the cooked rice.
  4. Assemble the bowl.
    Arrange rice, potatoes, green beans and cod on a wide plate. Add a lemon wedge.
  5. Finish.
    Top with extra parsley and add walnuts if you want extra crunch.

Variations & Substitutions

  • Swap cod for salmon for a richer bowl.
  • Add vegetables: zucchini, carrots or asparagus.
  • Make it low-carb: replace rice with cauliflower rice or extra green beans.
  • Make it dairy-free: replace herb butter with olive-oil herb sauce.
