This coastal-inspired Mediterranean bowl is everything you want in a fast weeknight dinner — light, colorful, protein-rich and filled with fresh vegetables. 👉 Ingredients
- 10–12 medium shrimp, peeled
- 1 cup broccoli florets
- 1 small zucchini, sliced
- 1 small red bell pepper, sliced
- 1 cup baby potatoes, halved
- 1 handful fresh spinach
- 1 tbsp olive oil
- 1 tsp smoked paprika
- Salt & pepper
- Lemon wedge
- Optional: tahini drizzle or Greek yogurt sauce
👉 Instructions
- Roast the potatoes, zucchini, peppers and broccoli at 200°C for 20–25 minutes with olive oil, salt and pepper.
- Sear the shrimp in a hot pan for 2–3 minutes per side with smoked paprika.
- Add spinach to a bowl as the fresh base.
- Arrange roasted veggies and shrimp on top.
- Finish with a squeeze of lemon and optional creamy sauce.
