👉 Ingredients

  • 10–12 medium shrimp, peeled
  • 1 cup broccoli florets
  • 1 small zucchini, sliced
  • 1 small red bell pepper, sliced
  • 1 cup baby potatoes, halved
  • 1 handful fresh spinach
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt & pepper
  • Lemon wedge
  • Optional: tahini drizzle or Greek yogurt sauce

👉 Instructions

  1. Roast the potatoes, zucchini, peppers and broccoli at 200°C for 20–25 minutes with olive oil, salt and pepper.
  2. Sear the shrimp in a hot pan for 2–3 minutes per side with smoked paprika.
  3. Add spinach to a bowl as the fresh base.
  4. Arrange roasted veggies and shrimp on top.
  5. Finish with a squeeze of lemon and optional creamy sauce.
