Lemon Tahini Chickpea Bowl

👉 Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1–2 cups chopped kale or spinach
  • ½ cucumber, thinly sliced
  • 1 lemon wedge

Lemon-Tahini Dressing

  • 2 tbsp tahini
  • Juice of ½ lemon
  • 1 tsp olive oil
  • ½ tsp garlic powder
  • 1–2 tbsp water (to thin)
  • Salt and pepper to taste

👉 Instructions

  1. Whisk the tahini, lemon juice, olive oil, garlic powder and water until smooth and creamy.
  2. Add the chickpeas to a bowl and drizzle with the lemon-tahini dressing.
  3. Arrange the cucumber slices and greens around the chickpeas.
  4. Top with a bit of lemon zest or sesame seeds.
  5. Serve immediately, chilled or at room temperature.
