
Lemon Tahini Chickpea Bowl

👉 Ingredients
- 1 can chickpeas, drained and rinsed
- 1–2 cups chopped kale or spinach
- ½ cucumber, thinly sliced
- 1 lemon wedge
Lemon-Tahini Dressing
- 2 tbsp tahini
- Juice of ½ lemon
- 1 tsp olive oil
- ½ tsp garlic powder
- 1–2 tbsp water (to thin)
- Salt and pepper to taste
👉 Instructions
- Whisk the tahini, lemon juice, olive oil, garlic powder and water until smooth and creamy.
- Add the chickpeas to a bowl and drizzle with the lemon-tahini dressing.
- Arrange the cucumber slices and greens around the chickpeas.
