
Greek-Style Stuffed Veggie Dinner Bowl
This Greek-style stuffed veggie dinner bowl is a simple way to get big Mediterranean flavor without heavy ingredients. Roasted peppers and zucchini become the “main,” filled with a herby grain mix and finished with feta, olive oil, and lemon.

Ingredients (1–2 bowls)
- 1 bell pepper, halved and deseeded
- 1 zucchini, halved lengthwise
- ½ cup cooked quinoa or rice (or a mix)

- 2 tbsp crumbled feta
- 1 tbsp olive oil
- 1 tbsp chopped parsley or dill
- ½ tsp dried oregano
- Salt and black pepper
- Lemon wedge, to finish

How to make it
Roast the pepper halves and zucchini halves at 200°C (390°F) for about 18–22 minutes until tender.
Meanwhile, mix the cooked grains with chopped spinach, herbs, oregano, a drizzle of olive oil, and a pinch of salt and pepper. Spoon the filling into the roasted vegetables, top with feta, and return to the oven for 5 minutes to warm through.
