Mediterranean one-pan chicken and veggies should feel easy, but not flat. The best version is not a crowded tray where everything steams together. It is a simple dinner where the chicken has space to roast, the vegetables keep some shape, and the lemon and herbs make the tray feel fresh at the end.

This is the kind of meal that works well on a weeknight because most of the work happens before the tray goes into the oven. Slice the vegetables, season the chicken, spread everything out, then let the oven do the rest.

Why the tray setup matters

The biggest mistake with one-pan chicken and vegetables is adding too much to one tray. Zucchini, tomatoes and onion all release moisture as they cook. If they are packed too tightly, the tray can turn steamy instead of roasted.

The fix is simple: cut the vegetables into pieces that cook at a similar speed, keep the chicken in a single layer, and leave some space between the ingredients. The meal still feels full, but the vegetables do not collapse into a wet layer under the chicken.

Lemon and parsley should come in near the end. They make the chicken and vegetables taste brighter without needing a heavy sauce. That small fresh finish is what keeps the meal from feeling like plain baked chicken.

  • 2 chicken breasts, sliced into strips or thick pieces
  • 1 zucchini, sliced into half-moons
  • 1 red bell pepper, sliced
  • 1 cup cherry tomatoes
  • 1 small red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper, to taste

How to make it

Preheat the oven to 425°F / 220°C. Line a baking tray with parchment paper if you want easier cleanup.

Add the chicken, zucchini, bell pepper, cherry tomatoes and red onion to the tray. Drizzle with olive oil, then season with oregano, paprika, garlic powder, salt and black pepper.

Toss gently so everything is coated, then spread the ingredients into a single layer. Keep the chicken pieces slightly separated from one another and avoid piling the vegetables too high.

Roast for 22–25 minutes, or until the chicken is cooked through and the vegetables are tender with lightly roasted edges.

Check the chicken with a food thermometer if needed. Poultry should reach 165°F / 73.9°C according to USDA safe temperature guidance.

Let the tray rest for a few minutes. Finish with fresh parsley and a squeeze of lemon before serving.

Small details that make it better

Use a large tray if you have one. A small tray makes the vegetables steam, especially the zucchini and tomatoes.

Cut the zucchini thicker than you think. Very thin zucchini softens fast and can turn watery before the chicken is done.

Keep the tomatoes whole or halved, not finely chopped. They bring juice and sweetness, but if they are cut too small, they can make the tray wet.

Add lemon at the end instead of pouring too much juice over the raw tray. A fresh squeeze after roasting gives better flavor and keeps the vegetables from getting soggy early.

Can you meal prep this one-pan chicken and veggies?

Yes, but it is better as a two-day meal than a long five-day prep. The chicken stores well, but the vegetables are softer after refrigeration, especially zucchini and tomatoes.

For leftovers, let the food cool briefly, then store it in a shallow container. Reheat gently, and add fresh lemon or parsley after warming so the meal does not taste flat.
