This version uses brown rice, grilled chicken, broccoli, carrots and hummus. It is simple, but the way you cool, pack and reheat it makes a big difference.

How to Make It
- Cook the brown rice according to the package instructions, then let it cool before packing.
- Season the chicken with olive oil, salt, pepper and paprika. Grill or pan-sear until cooked through, then let it rest before slicing.
- Steam the broccoli lightly so it keeps a little bite.
- Roast or sauté the carrots until soft but not mushy.
- Add the rice to one side of the container, then place the chicken, broccoli and carrots in separate sections.
- Add hummus in a small corner or separate cup. Finish with lemon before eating.
Packing Tips
Do not close the lid while the rice or chicken is still steaming. Trapped steam can make the box wet by the next day, especially if the hummus is already inside.
Keep the hummus separate if you are packing more than one day ahead. If it sits directly on the rice for too long, the grains can turn heavy. A small sauce cup or one corner of the container works better.
If you want the box to taste fresher at lunch, add cucumber, tomatoes, parsley or lemon after reheating, not before.
Storage
Store the box in a sealed container for up to 3 days. Reheat the rice, chicken, broccoli and carrots gently, then add hummus and lemon after heating.
